Simply Delicious Oatmeal Chocolate Chip Cookies

I’ve been having a love affair with oatmeal recently. I am not sure what prompted this adoration. As a little girl, I used to throw tantrums every time my grandparents tried to force feed me oatmeal for breakfast. Actually, a significant part of my memories of my grandparents consist of breakfast fears. They also insisted on serving way too runny soft boiled eggs. But I digress. The promise of oatmeal literally has been getting me out of bed in the morning these past months. Something about the hearty grain paired with brown sugar, nothing beats it. Which is why the oatmeal cookie might be the best cookie ever.

This recipe in particular makes for a delicious oatmeal chocolate chip cookie. Nuts and/or raisins can be added with the appropriate amount of chocolate chips removed. I personally like to stick with just chocolate. I am curious though about halving the chocolate chips and substituting in chopped mini marshmallows. My hope would be to achieve the s’mores chewy bar in cookie form. When I succeed, I promise to share.




Oatmeal Chocolate Chip Cookies

Makes about 2 dozen cookies

8 tablespoons unsalted butter, at room temperature
3/4 cup sugar
1 cup packed brown sugar
1 teaspoon salt
1/2 teaspoon vanilla extract
2 large eggs
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 1/4 cup quick-cooking oats
12 ounces semisweet chocolate chips

1. Preheat oven to 350°F.

2. Using an electric hand mixer or whisk, beat the butter in a bowl until light and fluffy. Mix in both sugars, salt, and vanilla. Add eggs, one at a time.

3. Mix together the flour, baking soda, and cinnamon in a separate bowl. With your mixer on low speed, add half of the flour mixture to the butter mixture. Once thoroughly mixed, add the second half of flour mixture. Mix in the oats and chocolate chips.

4. Drop cookies—about a tablespoon of dough each—onto a cookie sheet. Bake for about 10 minutes or until golden brown around the edge with a slightly gooey center. Remove cookies from the oven and cool on a rack.
